It has been many, many years since I have indulged in a filet mignon steak. To say the least, this was a bit of an extravagance: ($10.80US for a 1/3 lb grass-fed beef steak). But if it only happens on rare occasions…well all I can say is that you need to treat yourself to something special every so often! There was no “special occasion”…just the need to do something different for a change.

Filet Mignon grilled rare and served over a mixed onion, garlic, and balsamic marmalade*; roasted new potatoes with goat cheese and chives; steamed green beans from Warner Farms tossed with melted butter
Fruit Salad

*The marmalade was a slow-simmered mix of yellow onions, scallions, shallots, and garlic, sautéed slowly in butter with a pinch of sugar and spices, and a drizzle of balsamic vinegar.
