In a small bowl, whisk together:
1 cup plus 2 tablespoons unbleached plain flour
½ teaspoon baking soda
½ teaspoon salt
In an electric mixer, beat together:
1 stick (8 tablespoons) unsalted butter at room temperature
⅓ cup granulated sugar
⅓ cup brown sugar
½ teaspoon vanilla
Then add:
1 egg (beating until egg is combined) and the flour mixture (again beating until smooth)
Stir in:
¾ cup butterscotch morsels
¾ cup chopped pecans
Cover the bowl and chill in the refrigerator.

When ready to bake, preheat the oven to 375°F and line baking sheets with parchment paper. Drop the cookie dough by rounded tablespoons onto the sheets about 2-3 inches apart. Bake cookies for 9-11 minutes until golden then cool on the baking sheet for two minutes. Remove to wire racks to cool completely. Store in a rigid airtight plastic container or tin.

Makes about 1 ½ dozen cookies.
