Several years ago I developed this recipe for a vegetarian-style “sloppy Joe.” Lentils are the perfect stand-in for the traditional ground beef, and I never make the meat-based version of this anymore. I had originally planned to serve this with fried shoestring potatoes, but after getting home late from work there wasn’t enough time to do all that I had planned, so I had to revise. I had organic potato chips on hand, and those were the substitute.
