This menu was inspired by Edna Lewis, from her cookbook titled In Pursuit of Flavor. In case you are not aware of this great American cook, she grew up in Orange County, VA, and became one of the first African-American chefs recognized for her tremendous contributions to American gastronomy. She was also an excellent seamstress and made gowns for the likes of Marilyn Monroe among others. I encourage you to visit to find out more about this amazing woman! Her recipe called for chicken breasts, but I had turkey breast on hand, and that’s what I used for this.
