South of the border, particularly in the Mexican province of Sonora, this dish is called “chivichangas.” In the U.S. (for whatever reason), we call it “chimichangas.” (And there is controversy on whether it originated in Mexico or Arizona.) However you spell the word (and wherever it originated), this is a great dish involving flour tortillas stuffed and folded over a filling and fried until crisp. Ole! The “green rice” is totally Mexican in origin.
