This is one of those meals that features the last-of-the-summer produce (corn and lima beans). And it is simple and quick to prepare on a Friday night. I know lots of folks have objections to lima beans, but just bear with me and try this. The limas really give this menu a “boost.” If you don’t want to include them, then that is your choice, (I suppose you could include some diced green beans), but the corn is an essential ingredient, so don’t leave that out of the mix.
