This is such a simple menu to prepare—and quick also! Halibut (closely related to flounder but typically much larger), is found in both the northern Atlantic and Pacific Oceans. Interesting thing is…those fished from the Atlantic have their eyes on the right side of their body; those from the Pacific have eyes on the left side! All too often you hear broccolini referred to as “baby broccoli” and while it does resemble a small version of broccoli, it is not the same. And to my mind, it is even more delicious!

Halibut baked with a lemon-butter-white wine sauce, topped with toasted garlicky breadcrumbs and minced parsley
Boiled fingerling potatoes; stir-fried red, yellow, and green peppers with onions; steamed broccolini
