I have never visited the “Delta region” of southern Mississippi, but I have had occasion to be in Tupelo just to the south of Memphis, TN, and in New Orleans. This menu was developed based on my memory of something I had during my visits to the region. The Delta provides a great deal of the nation’s rice production.
