Just about any fish dish cooks quickly, and this is definitely one of those that can be prepared in under an hour (along with the sides and dessert). I chose cod for tonight’s meal, because that was what looked good at the market, but any fish filet of about ½ to ¾ inch in thickness would work.

Baked Atlantic cod filet with sauteed almonds and an orange-butter sauce
Brown rice with shitake mushrooms, shallots, and parsley
Braised Bok Choy and stir-fried snow peas
Apple slices with sharp cheddar cheese
