Every so often I crave a steak, and my favorite is a rib-eye grilled medium rare with a sprinkling of salt and pepper. On a whim, I developed the potato side dish—which turned out very nicely if I do say so myself! The potatoes are first boiled, then cooled, peeled, and grated. Tossed together with some minced roasted red peppers, onions, and herbs, shaped into patties, dredged in breadcrumbs, and then roasted in the oven until crispy on the outside and creamy on the inside, these potato “pancakes” are truly delicious!
