This menu may sound strange to some folks, but it’s often what I pull together on a chilly fall evening when all I really want is a plate of vegetables with a little bread. In this case, the “bread” consists of squares of cornbread dressing including lots of vegetables, served with a special “gravy” sauce, and accompanied by even more vegetables. Sound like Thanksgiving without the turkey? Yes, that’s the case. My favorite part of the traditional Thanksgiving meal is the dressing, thus the following…

Cornbread dressing with onions, celery, mushrooms, red peppers, sun-dried tomatoes, and garlic served with vegetable broth “gravy”
Steamed  Brussels sprouts; sweet potato and apple puree; house-made pickled beets
Honey-roasted pecans over vanilla ice cream
