The sweetness of the scallops are well-served by the “foils” of spicy ginger-red pepper sauce and the slightly bitter greens like Bok Choy (as well as the other aromatic vegetables tossed with the pasta.) The mixture of crispy, tender, and soft textures here is appealing, in combination with the sweet/spicy/bitter flavors of the other components.
