Since I live alone, I don’t roast a whole chicken just for myself—I only do that when a couple of others are coming over for dinner. But I have found that I can achieve similar results with a couple of chicken breast halves. Carefully watched and basted, these turn out wonderfully, but you must buy breast pieces that have their skin and bones still attached for the best flavor—and need I say they really should be organically-raised, cage-free breeds? The combination of serving the sweet potato with the slightly bitter rapini greens creates a wonderful combination of flavors and textures.l
