It’s frigid here in Northern Virginia folks! So tonight I am focusing on oven-roasted and braised dishes that can be enjoyed while sitting next to a crackling fire of birch logs. I chose to roast a whole chicken breast (with bones and skin intact). Not quite as daunting as a whole chicken and sufficient for me to have a meal tonight plus leftovers for lunches later in the week. The rich and creamy potato dish and the braised cabbage made for a memorable and satisfying meal.
