As you all know by now, I attempt to use organic ingredients in almost everything I cook, and I would venture to say that the ingredients I use are 95-99% organic. A couple of years ago, I was SO happy to find a source for Sea Island red peas, (a favorite from my childhood), as well as Carolina Gold rice, both from Anson Mills in South Carolina and both of which are organically-raised.  Tonight’s menu also features a great dessert suggestion from one of Martha Stewart’s cookbooks.
