My heritage is at least half Irish, and while this “holiday” was never a big deal to my family as I was growing up, I have almost always in my adult life cooked the traditional “corned beef and cabbage” meal. However this year, with leftovers on hand from Thursday’s menu, I am changing things up a bit while still making a nod to Ireland. In the Gaelic language: “Le gach dea-ghuí.”
