There are variations of this simple egg dish scattered throughout the Mediterranean. Simple, and easy to pull together on a night when you don’t want to fuss too much in the kitchen, it’s almost like one of my “breakfast-for-dinner” menus. The cheese grits provide a nice contrast of texture to the meal.
