This is another “fusion” menu to a certain extent in that it takes influences from different cuisines and my own imagination. The eggroll stuffing is certainly not at all Asian in origin, and the rice dish which accompanies is by no means traditional either. Yet, the components blend well together and make for a satisfying meal. An added bonus is that the eggrolls can be made ahead and frozen—no need to defrost before dropping them in the deep fryer.
