A few weeks ago I proposed a “yellow dinner” which featured a soup. Tonight’s meal takes the yellow theme in a different direction altogether. As most of you know, I am a fan of breakfast or brunch type meals served in the evening (probably because I never cook breakfast during the morning hours unless I absolutely have to when I have houseguests).

Omelette stuffed with yellow peppers, onions, and cheddar
Grilled yellow summer squash
Corn fritters

Peach ice cream
