I love the fact that lentils, if they are not overcooked, are a great “stand-in” for ground beef; thus, my inspiration for experimenting with them here in a burrito. The lentils are cooked with chilies, onions, garlic, and spices, and stuffed in heated flour tortillas with traditional toppings of cheese, chopped tomatoes, sour cream, and lettuce before being rolled up. The rice dish is a more traditional Mexican preparation of rice with tomatoes and spices.
