Tonight I am making a very different meatloaf. There is still the traditional ground
beef and pork (although not veal in this iteration—that’s being replaced with ground turkey instead), but the seasonings and additions make this different. Chipotle chili powder, cumin, and salsa are gently blended into the meat mixture with finely crushed corn tortilla chips and minced garlic, along with diced onions. Once the loaf has been shaped and formed into the dish, it is topped with a puree of additional salsa before baking.
