As always, there are numerous variations of this black bean soup. I like to use dried beans that have been soaked overnight and slowly simmered with the remainder of the ingredients. You will need a source for fresh cilantro, because it is essential to the success of this dish. Also, it is imperative that you garnish the soup with a spoonful of sour cream and a squeeze of lime juice!
