I am NOT an advocate of the idea that soup is simply something you dredge up from leftovers in the fridge, but tonight’s menu does indeed use some of the leftovers from yesterday’s New Year’s  menu. In this case, the cabbage, some of the Hoppin’ John, and a bit of the rice are stirred together in a soup pot with vegetable stock and tomato juice until heated through. It is a cold day here, and a hearty soup was just the thing to knock out the chill while sitting next to a blazing fire, awaiting what the weather frogs predict will be an even colder day tomorrow!
