This vegetarian menu takes a bit of initial time in the chopping/dicing/slicing stage…but then, all of the ingredients simmer in a slow cooker for most of the day without any need for further attention. The cornbread muffins are simple to make from scratch in only 30 minutes. The cookies, start-to-finish, only take about an hour and if you plan ahead, these can be made as much as a week in advance. Speaking of the cookies—just follow your favorite oatmeal-raisin cookie recipe, but make the following changes: omit any spices called for, and replace the raisins with chopped, sweetened dried cherries.
